Lemon Coriander Soup

A soup can do what medicines can’t! Warmth and soothe of a good soup in the winter chills can help you relax in an inexplicable way. Especially, when you're down with cold, cough and fever or simply trying to keep warm. It's by far the most comforting food, not to mention, healthy and delicious too.

Lemon – Coriander is one of the simplest and most delicious soups found all over the world. It is a clear consistency soup, more like a broth and hence is lighter on the stomach. Acts like an appetizer and is a healthy substitute to tea or coffee.

  • Lemon is a rich source of vitamin C which in turn helps build immunity from cold and cough during winters.
  • Coriander leaves have numerous health benefits like it aids digestion and lowers blood glucose levels in diabetics. It is also known to lower bad cholesterol (LDL) and raise good cholesterol (HDL).

 

Ingredients

  • Lemon juice - 2 tablespoons 
  • Fresh coriander leaves chopped - 2 tablespoons 
  • Oil - 2 tablespoons 
  • Spring onion bulb chopped - 1 medium 
  • Ginger chopped - 1 inch piece 
  • Gram flour (besan) - 2 tablespoons 
  • Vegetable stock - 4 1/2 cups 
  • Cabbage chopped - 1/4 small 
  • Carrot cubed - 1 medium 
  • Black peppercorn crushed - 7-8 
  • Salt to taste 

How to make

  1. Reserve the stems of coriander leaves. Heat oil in a pan. Add spring onion bulb, ginger and sauté till translucent.
  2. Add gram flour and sauté till you get a nice aroma. Add vegetable stock, coriander stems, cabbage and carrot cubes and bring to a boil.
  3. Add crushed peppercorns and continue to boil. Add half of the chopped coriander leaves and cook for five to ten minutes.
  4. Strain and keep aside cooked vegetables. Heat the strained soup. Add salt, lemon juice and bring to a boil again. Season with the remaining chopped coriander leaves and serve hot.
