Experts agree that breakfast is the most important meal of the day. But sometimes, there isn’t enough time to make a proper breakfast, and a drive-through isn’t an option you want to default to. Overnight oats to the rescue!
By soaking the oats overnight and adding warming spices from Ayurveda, this breakfast option packs a lot of nutritional value while maintaining blood sugar levels for an extended period. It’s also easier on the digestive system. Plus, the added chia seeds increase your daily fiber intake and makes you feel fuller longer. Add a few nuts for a protein boost. And my favorite addition is sliced bananas!
Make this easy, healthy breakfast option in mason jars—without any cooking, and have the perfect grab-and-go breakfast! Even your kids will eat it! Just don’t tell them how healthy it is! 😉
Here’s how to make this yummy breakfast:
Chai Spiced Overnight Oats
2 cups old-fashioned rolled oats
2 T chia seeds
1 t cinnamon, ground
1 T ginger puree (or ½ t ginger, ground)
¼ t cardamon, ground
⅛ t cloves, ground
A pinch of freshly ground black pepper (Don’t skip! This is the pièce de résistance!)
3 T coconut sugar or agave (or other healthy sweetener)
2 ½ c oat milk or other non-dairy milk
Combine the oats, chia seeds, and dry spices in a medium bowl and stir well.
Stir in non-dairy milk and ginger puree if using.
Mix well and cover; place in the fridge overnight or for about six to eight hours.
Top with nuts and sliced bananas.

Notes: This recipe makes about four servings but can also be doubled. Divide the overnight oats into mason jars or other containers for easy grab-and-go access. If you’re not a fan of a cold breakfast, you can also warm the overnight oats.
