When hunger hits we tend to eat the nearest unhealthy snacks we can get. Try out this vegan snack that is easy to make and is high in nutrients
Ingredients:
- 1/2 cup of almonds
- 1/4 of an organic beet - chopped
- Juice of 1 lemon
- 1/2 an organic tomato
- 1/4 cup of olive oil
- Small bunch of fresh dill
- Salt and pepper according to taste
Preparation:
- Grind almonds into a paste
- Add chopped beet, tomatoes, lime juice, olive oil, salt and pepper
- Blend it all together in a food processor
- Garnish with fresh dill
- Serve on some great gluten free rice bread - I like the Food for Life brand as it is soy, corn and egg free
Benefits:
- Almond increases vigor and according to ayurveda is good for pacifying vata diseases like constipation and nerve disorders
- It has antioxidant and anticarcinogenic properties
- Beetroot contains antioxidants, fiber and minerals like potassium and magnesium
